What category does hand-to-hand combat fall under? The best fight scenes I know are from the (latest two) Sherlock Holmes movies, and Jackie Chan, it's much more creative if you haven't got any weapons, except what you can grab from the scenery 
But I those were the only fight scenes that stuck in my mind, in the movies I watched for other reasons there may have been better ones but I did not remember them. Although 300 had great swords/spears/etcetera fights, and Star Wars the great spaceship fights, it's hard to compare!
